Vegan Shibby
Voila. The most amazingest, tastiest, prettiest roast dinner ever. All the more tasty for me as I have hardly eaten this week due to being ill.

Seitan roast with my hubby’s amazing roast spuds, his veggie gravy and steamed veg, of course with cranberry sauce.

I had attempted to make Yorkshire puds, but the recipe was a bit mad and they didn’t turn out right. Will try those again another time. Here is the recipe I used for the roast…

The only thing I didn’t have was the liquid smoke which I plan to source asap as it keeps popping up in loads of recipes.

Dinz. I used up a bunch of leftovers from during the week as we’re getting close to needing to do a shop now.

Made some more papas arragudas (Canarian potatoes) as I still had mojo sauces left from the other day. Then I made a sort of ratatouille using loads of veg, especially stuff that was starting to wilt in the fridge - aubergine, red onion, mixed peppers, courgette, asparagus, green beans, peas and sweetcorn, then threw in a bunch of mixed herbs and some tinned toms.

It was pretty bloody good :) Now I’m off to finish watching the handball…

I subbed the butternut squash for sweet potato and also crumbled cashew on rather than peanuts (cause I had none)

Didn’t take long and was delicious :)
