Ma po aubergine. No recipe really, just swap minced beef for vegan mince and use aubergine with tofu.
Teriyaki soy burger
Dinz. Puff pastry with spinach, roasted beetroot, garlic and Cheezly. Salad I threw together from kale, spring onion, cucumber, fresh mint, sweet red pepper, capers and an olive oil and raspberry vinaigrette.
Oatmeal banana cookies (although I think they come out more like a cake thing).
I added some flax seed and sultanas to mine and cut down the sugar
Red Thai coconut noodles with red cabbage, red onion, leek, beansprouts, butternut squash and carrot
Breakfast. Natto, okra and rice with a side of edamane, miso soup and a green tea.
Remember if you use natto to not use the soy sauce sachet that comes with it as it normally has fish in it. The mustard is fine though.
Brunch. Tofu version of huevos rancheros. Tortillas, red onion, peppers, crumbled tofu (marinaded in turmeric, vinegar and black salt), kidney beans, mozzarella style Cheezly, avocado and some jalapenos. Yum.
