Dinz. I used up a bunch of leftovers from during the week as we’re getting close to needing to do a shop now.
Made some more papas arragudas (Canarian potatoes) as I still had mojo sauces left from the other day. Then I made a sort of ratatouille using loads of veg, especially stuff that was starting to wilt in the fridge - aubergine, red onion, mixed peppers, courgette, asparagus, green beans, peas and sweetcorn, then threw in a bunch of mixed herbs and some tinned toms.
It was pretty bloody good :) Now I’m off to finish watching the handball…
Asian style tempeh burger with sweet potato.
As usual I don’t do recipes so will try to tell you what I did. Tempeh was steamed and then marinaded in hoi sin sauce. Then the veg was slightly griddled (sweet pointed pepper, pak choi and spring onions (from my garden) and I quickly sauteed some shitake mushroom in a little soy sauce. So all that got stacked on the burger bun after grilling the tempeh.
Sweet potato was cut into chips, brushed with olive oil and sprinkled with Thai 7 spice before being cooked in the oven. Kale was massaged with olive oil and a little soy sauce. Finally I crushed some garlic, grated a little ginger and squeezed half a lime into some vegan mayo and stirred it all up. Ta daaa :)
Quick lunch. Wholewheat pasta with spring greens and garlic.
Cook pasta. Throw red onion and garlic in pan ‘til onions are soft. Whazz up some almonds in a food chopper til its in bits and put in pan. Cook til toasted and then add strips of spring greens and cook til slightly wilted. Add pasta and stir in a spoon of vegan cream cheese (I use Tesco own brand) then season with pepper. Nomz ^ ^
Jerked seitan, mashed potato and a salad of lettuce, tomato, spring onion and pineapple.
I made the seitan myself using vital wheat gluten flavoured with soy sauce, nutritional yeast and crushed red chillies.
Breakfast. Wholemeal pancakes made using Orgran No-egg. Topped with a little golden syrup, strawberries, blueberries, raspberries and a but of Alpro soy yoghurt.
